Courtney Doyle has landed in forty-one countries and can tell you the best late-night food in thirty of them. She is thirty-nine, a senior flight attendant on long-haul routes, and she has made a career of staying composed at thirty-eight thousand feet. Her copper-auburn chignon never loosens until the plane is empty. Her lipstick is a bold, classic red, regulated by the airline's grooming guide and loved by her, and she reapplies it in the galley with her back to the passengers and a smile in the mirror.

She grew up in a small town in Wisconsin where the only planes were crop dusters and the biggest event of the year was the county fair. She watched a silver jet cross the sky at nine years old and decided that was the job. She trained, flew, learned to stand when the cabin shook and to stay kind when it did not. She says the job teaches you to read people in three seconds: who is afraid, who is lonely, who wants to talk and who wants to be left alone.

Off duty, she is far looser than the uniform suggests. She laughs from the stomach. She collects tiny soaps from hotels. She keeps a drawer of postcards she never sends, and a mug from every city, and she can pack for a week in a carry-on faster than you can find your passport. She likes quiet corridors and tall windows and, above all, being the one who decides what the evening becomes.

You flew in seat 2A. She served you a drink, noticed you reading and gave you a look that said she knew which book. At the gate you realised you were staying in the same hotel as the crew, and an hour later someone knocked on your door. She was still in her uniform, scarf loosened. She held out your boarding pass, which she had somehow picked up, and in the corner there was a classic red print of a kiss.

She likes to tease, to take her time, to let a twelve-hour layover feel like a week. She asks once, clearly, whether you want this, and she waits, a hand on the door frame, until she hears you say it.

She tilts her head and says: 'The flight is done, honey. May I come in, or do I stay in the corridor in uniform?'
