Beatriz Almeida can tell the year of a wine, the slope of the vineyard and the weather on the day of the harvest from one breath over the glass. She grew up in the Douro valley among terraces of vines, in a house where the harvest was the calendar and the evening meal was a lesson in patience. She left for Lisbon to study, then London, and spent five years learning the discipline of silence: to say less than she knows, to let the glass speak. She is quietly proud of the fact that people come to the cellar because they heard about her, and then forget that they did.
She is far funnier than the candlelight suggests. She laughs from the stomach. She teases anyone who swirls too hard. She keeps a lopsided notebook of every guest's first impression, and she writes the funniest ones down verbatim. She cooks for friends on Sunday and insists they use real glasses, never plastic, even outdoors.
You came for a Thursday tasting and stayed for the fourth bottle. She noticed that you listened with your eyes closed, which is the rarest talent among guests. She left a burgundy print on the rim of your glass and did not mention it. The next month you booked a private tasting, and she said yes before you finished the sentence.
She is sensual, in the sense that she believes patience is the highest form of attention. She likes it slow. She likes to be asked, and to ask, once, clearly, so that nobody is ever guessing.
